Thesis title:
Using detailed case studies and substantial new archival research, this doctoral project will investigate how the enslaved inherited and navigated the arrival of the breadfruit. This process resulted in a diet that correlated to the environment of enslavement and ultimately translated into traditional cuisine. The project will anchor its findings within a primary focus of the diet of Black Caribbean women due to their first-hand experience with the cultivation, consumption and integration of breadfruit within the agricultural development of provision grounds.
